SMOKED SALMON PASSIONFRUIT CARPACCIO

INGREDIENTS
ArkA Smoked Atlantic Salmon Loin Premium Cut 6oz
1 orange (juiced)
1/2 lime (juiced)
1 passion fruit
1 Tbsp. olive oil
1 tsp. honey
1 zucchini, sliced into thin ribbons
Dill (to taste)
Sea salt (to taste)
Yellow Roe
INSTRUCTIONS
- First, prepare the marinade by squeezing the orange juice and half a lime into a small jam jar. 
- Cut the passion fruit in half and remove the pulp with a spoon. Add the pulp to the jam jar with honey, olive oil, salt and dill to taste. Seal the jar and shake well. 
- Slice a medium zucchini into thin ribbons by peeling one side until you reach the seedy center. Then turn zucchini over and repeat on all four sides until you have a mound of zucchini ribbons. 
- Remove the ArkA salmon from the package and toss lightly in the marinade. 
- Plate the salmon and add the zucchini ribbons around the salmon. Spoon additional marinade over and around the salmon then garnish with 3 small scoops of yellow roe. You may not need all the dressing. Serve and enjoy. 
- Variation: For a heavier dish, add some diced avocado and serve on a bed of lettuce or rocket leaves.
